With a spicy kick from cayenne pepper, this creamy corn makes a tasty side for summer dinners.
- 2 tablespoons butter
- 1 bell pepper (any color), cored and chopped
- 1 pinch cayenne pepper
- 4 cups frozen corn
- 1/4 cup half-and-half
- In a large skillet over medium heat, melt butter. Add bell pepper, cayenne, and salt and pepper to taste. Saute, stirring occasionally, about 5 minutes.
- Add corn and cook, stirring often, until corn is tender, about 5 minutes more. Stir in half and half and remove from the heat. Serve immediately.
