Sweet Potatoes with Coconut Butter
- Shredded, unsweetened coconut
- Baked sweet potato
- Make coconut butter by whizzing shredded, unsweetened coconut in a high--speed blender for 10 to 15 minutes, or buy it jarred. Put coconut butter on baked sweet potatoes.
