Thai Chimichurri

Ingredients

  • Kaffir lime leaves
  • Lemongrass
  • Cilantro
  • Red chile
  • Garlic cloves
  • Fish sauce
  • Lime juice
  • Honey
  • Coconut oil
  • Olive oil

Directions

  1. Whisk together 1/4 cup thinly sliced kaffir lime leaves, 1 stalk thinly sliced lemongrass, 1 cup chopped cilantro, 1 minced long red chile, 3 minced garlic cloves, 1/4 cup fish sauce, 1/2 cup lime juice, 2 tablespoons honey, 1/2 cup melted coconut oil, and 1/2 cup olive oil. Let sit for 2 hours before serving.
