- 2 ripe tomatoes (about 10 ounces)
- 1 garlic clove, peeled
- 1 teaspoon kosher salt
- 1/4 cup extra-virgin olive oil
- 1 sprig thyme
- Cut the tomatoes in half horizontally. Set a box grater over a large bowl. Grate the cut sides of the tomatoes against the large holes, then discard the skins. Grate the garlic into the bowl using the small holes. Whisk the salt and oil into the mixture until smooth, then add the thyme sprig.
- Let mixture stand for at least 5 minutes. Spoon over grilled vegetables, toast, grilled seafood, or grilled meat.
