Tuna and Quinoa Salad

Ingredients

  • 1/2 cup cooked quinoa
  • 1 6 ounce can chunk light tuna packed in water, rinsed, drained, and flaked
  • 1/4 cup cherry tomato
  • 1/4 cup finely chopped Italian parsley
  • 1/8 cup chopped walnuts
  • 1 tablespoon fresh lemon juice
  • 1/2 tablespoon extra virgin olive oil
  • 1/4 teaspoon kosher salt
  • 1 pinch of coarsely ground black pepper

Directions

  1. In a large bowl, combine all ingredients, and mix gently to combine.
