US Open Chop Chopped Salad

Ingredients

  • 2 ounces romaine lettuce, chopped 1/4 inch
  • 2 ounces grilled steak, 1/4 inch julienne
  • 1 ounce hard salami, 1/4 inch dice
  • 1 ounce garbanzo beans
  • 1 ounce artichoke hearts, rinsed and chopped
  • 1/2 ounce carrots, 1/4 inch dice
  • 1 ounce cucumbers, peeled and seeded, 1/4 inch dice
  • 1 ounce plum tomatoes, seeded and 1/4 inch dice
  • 1 ounce extra virgin olive oil
  • 6 Kalamata olives, seeded
  • Juice of 1/2 lemon
  • Black pepper, freshly ground

Directions

  1. Combine all chopped salad ingredients in a salad bowl and toss.
