Vegan Carrot Hot Dog

Ingredients

  • Carrots
  • Vegetable stock
  • Tamari or soy sauce
  • Garlic clove
  • Ginger
  • Red or white wine vinegar
  • Liquid smoke
  • Brown sugar
  • Oil
  • Buns
  • Toppings

Directions

  1. Simmer 4 carrots in boiling water for 8 to 10 minutes, then shock them in ice water. While they simmer, stir together 4 tablespoons vegetable stock; 3 tablespoons tamari or soy sauce; 1 garlic clove, sliced; 1/2-inch piece of ginger, sliced; 2 tablespoons red or white wine vinegar; 2 teaspoons liquid smoke; and 3 teaspoons brown sugar. Pour this marinade over the cooled carrots and let sit overnight.
  2. When you're ready to cook, put 1 teaspoon cooking oil in a pan over medium-high heat; add carrots and saute for about 10 minutes, drizzling with marinade every few minutes and turning regularly. Pop 'em into buns, add your favorite toppings, and dig in.
