Vegan Kale Spice Cake

Ingredients

  • 6 tablespoons ground flaxseeds
  • 3/4 cup warm water
  • 1 bunch (2 to 3 cups) kale, washed, stems removed
  • 1 cup applesauce
  • 1 1/2 cups sugar
  • 2 1/3 cups flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger (ground or freshly grated)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • Powdered sugar, to serve

Directions

  1. Preheat oven to 350 degrees and grease a 9-inch spring-form pan. In a small bowl, stir together flaxseeds and water; set aside.
  2. Place kale, applesauce, and sugar in a food processor and blend until smooth. In a large bowl, combine flax mixture, kale mixture, and remaining ingredients except powdered sugar until smooth. Pour into prepared pan and bake for 40 to 45 minutes until a toothpick comes out clean. Cool on a rack. Dust with powdered sugar to serve.
