Warm and Spicy Kale with Shitake Mushrooms

Ingredients

  • 2 tablespoons coconut oil
  • 1/2 small red onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons turmeric
  • 1 tablespoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 piece ginger, grated
  • 1 yellow or orange bell pepper, chopped
  • 10 small shitake mushroom caps, thinly sliced
  • 1 1/4 cups cooked chickpeas
  • 2 heads (about 1 pound) kale, roughly chopped
  • 2 pinches pink salt

Directions

  1. Heat a large pan over medium heat for 30 seconds. Add oil and heat 1 minute. Add onions and garlic, and let cook 1 minute. Add spices and heat until fragrant, about 1 minute. Add bell pepper, mushrooms, and chickpeas, and cook, stirring occasionally, 1 to 2 minutes until mushrooms start to get glossy and peppers get soft. Add kale and cover for 1 minute. Remove lid and stir kale 30 to 45 seconds until uniformly bright green. Remove from heat and add salt to taste.
