Zhoug

Ingredients

  • 2 1/2 cups parsley leaves, packed
  • 1 cup cilantro
  • 1 jalapeno, chopped
  • 1 cup pumpkin seeds, toasted
  • 1 tablespoon ground coriander
  • 1 tablespoon ground cumin
  • 1/4 cup sugar
  • 1/4 cup fish sauce
  • 1 tablespoon salt
  • 3 tablespoons champagne vinegar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon white pepper
  • 1 1/4 cups olive oil
  • 1 cup water

Directions

  1. Add all ingredients to a food processor or a blender and blend until smooth.
  2. Serve over grilled meats or use as a dressing for hearty greens, like kale and escarole.
