Quinoa Salad with Citrus Cilantro Dressing

Ingredients
| 1⁄2 | c | quinoa |
| 1 | c | water |
| 1⁄4 | c | diced cucumber |
| 1⁄4 | c | tomato, peeled, seeded and diced |
| 3 | coarsely chopped orange segments | |
| 2 | T | chopped celery |
| 2 | T | Citrus Cilantro Dressing (see recipe below) |
| Fresh cilantro leaves for garnish |
Instructions
1. Rinse and drain the quinoa in a fine-mesh strainer under running tap water until the water runs clear.
2. Bring the water to a boil in a small saucepan. Add the quinoa and cook for 15 minutes over medium-low heat or until all the water is absorbed.
3. Meanwhile, in a medium bowl, combine the cucumber, tomato, orange segments, celery and dressing. Add the quinoa and toss to mix. Refrigerate until cold. Garnish with cilantro leaves and serve chilled.
