Orange-Fennel Shrimp and Millet
You won't want to stop eating this zesty seafood meal, but feel free to safe it for tomorrow's lunch. I know what you're thinking, WTH is millet?! (We've got you covered.) Millet is a small seed that is packed with nutrients such as calcium and magnesium. Because of its looks and consistency, many believe millet is a grain, but this filling ingredient is actually gluten-free! Shrimp is a great source of protein and magnesium while fennel, a veggie part of the carrot family is packed with fiber and vitamin C. So you'll be checking all necessary nutrients off your list.
