Food for thought

Inspiration strikes at the oddest times. While logging some time on the cardio machines today, I began thinking about what I'd buy at the grocery store. I already had some essentials in mind (nonfat milk, low-fat cottage cheese, fresh fruit, salad fixings), but I added zucchini to my list after watching a TV commercial with the vegetable in it. My idea was to slice a zucchini lengthwise down the middle to make two "boats," and roast them in the oven with a little bit of olive oil, salt and pepper. I'd then spoon some marinara sauce mixed with lean ground turkey over each and sprinkle a little Parmesan cheese on top. It turned out to be simple, filling, and easy—and a novel way to include a vegetable in my diet that I usually don't eat.
