Dinner to Lunch

When the clock strikes noon and nothing healthy is readily available, it's easy to reach for fast food or vending-machine fare or forgo eating altogether. "Women are so busy with family, friends, and work that planning and making lunches in advance fall to the bottom of our priority list," says Bethany Thayer, R.D., a spokesperson for the American Dietetic Association. Your goal then becomes to satisfy a growling stomach rather than eat a nutritious meal. The solution? Our simple two-for-one dinners-you make an extra portion of one or two ingredients, which you later turn into a fabulous new dish to bring to work the next day. Now when it's time for lunch, you'll have a healthy meal you'll love. What could be more satisfying?
