Toby Amidor, M.S., R.D., C.D.N., F.A.N.D. is a cookbook author, spokesperson, speaker, and recipe developer with more than 20 years of experience. Her work has appeared in FoodNetwork.com, EatingWell.com, Today's Dietitian Magazine, and more. She has appeared on TV shows including The Dr. Oz Show, San Antonio Live, and more.

She has written nine cookbooks, most recently The Diabetes Meal Prep Cookbook. She is the founder of Toby Amidor Nutrition, PC and provides nutrition and food safety consulting services for individuals, restaurants, and brands.

She is on the editorial advisory board for Today’s Dietitian Magazine, is an advisory board member for Forbes Health, on the medical board for Eat This, Not That!, and was a consultant for several seasons of Bobby Deen's cooking show, "Not My Mama's Meals." She spent 11 years an adjunct professor at Teachers College, Columbia University and is currently an adjunct at Hunter College, School of Urban Public Health in New York City.

Toby trained as a clinical dietitian at New York University and holds a bachelor of arts in Hebrew studies from Binghamton University. In 2018, she was awarded by the Academy of Nutrition & Dietetics the coveted Media Excellence.
