I made oatmeal again for breakfast—addiction alert! Even though the Kickstart offered other options such as a fruit smoothie and blueberry buckwheat pancakes, oatmeal is so quick and simple, and I never tire of it. I do like to make smoothies for weekend breakfasts and pancakes are actually one of my favorite dinners, but this weekend I decided to skip the kitchen labor and get on with my day!
For lunch I made the Curried Lentil Soup. Onion chopping tip: Make cuts almost to the bottom of the onion but not quite, at ¼-inch intervals in one direction, and repeat perpendicular to your cuts so it looks like this. Then turn it on its side and slice all the way through, and your pieces will be the perfect size, minimal crying involved. The same goes for garlic.
There was so much soup and it was so good that I had it again for dinner! Lame? Maybe. But I made another swing dance date with my friend who stood me up on NYE so I didn’t have time to cook a whole new dinner. To apologize for that weekend, he brought me not one but two bars of Trader Joe’s Vegan Dark Chocolate. Forgiveness granted.
