Dinner tonight was Southern Beans n’ Greens with the leftover brown rice from last night. I turned it into what Susan Levin calls “Beans, Greens, and Grains.” Henceforth to be known as BG&G because I have a feeling I’ll be making a lot of similar combos.
It was a super easy meal to create. I’d never cooked with kale before, and learned two things.
2. Kale really cooks down. Buy a bit more than you think you’ll need.
So I just spooned the beans n’ greens over the grains and squeezed a little lemon juice on top. This meal didn’t have as many textures going on as last night’s (I loved the crunchy celery) but it was good! I was hungry again around 11 p.m. so I had a handful of trail mix and a Clementine.
