Healthy eating isn’t just about using lots of veggies, it’s also about the way you cook them. For example, eggplant sautéed in olive oil is great. Eggplant battered and deep fried? Delicious, but full of fat. So one of the first steps I took toward changing my diet was using recipes as a starting- off point and tweaking them. Before I start chopping and mixing, I see if I can cut out any of the cheese, butter, oil, and sugar it calls for. Let’s say I’m making a stir-fry. I replace half the oil with low-sodium vegetable broth. This adds flavor and moisture while taking out a lot of fat and calories.
