Diet-friendly nachos

I used to think that if I were on a diet, I would need to ban all my favorite unhealthy dishes. But I’ve learned that by making tiny tweaks to them, you can eat what you love without gaining weight. Take nachos for example. I love digging into a platter of fried chips topped with gooey cheese, ground beef, and sour cream, but that doesn’t fit into my current lifestyle. So I created my own version. I place a handful of blue corn tortilla chips on a plate and add black beans, cooked spinach, fresh salsa, sliced avocado, black olives, and a pinch of garlic salt. Then I sprinkle them with a small amount of shredded lowfat cheese (usually a Mexican blend made with 2 percent milk, but feta is surprisingly good too), and pop it in the microwave for 15 seconds. This decadent-tasting snack satisfies my craving without causing any morning-after guilt.
