Mapping out a healthier road trip

Some friends invited us to join them at their beach house for the weekend. It’s a six-hour drive, and I didn’t want to be forced to grab a cheeseburger along the way, so I packed a cooler full of healthy food. I loaded it with sandwiches with whole wheat bread, turkey, avocado, spinach, and a little mayo for James Wilson and me, and salmon salad with fresh dill and capers for James. I also tossed in yogurt, peaches, nectarines, and cherries. Instead of bringing soda and juice boxes, I bought James Wilson a new Lightning McQueen thermos from Target, which he’s really excited about, and filled it with ice water; for the grown-ups, I made iced green tea. We also plan to take frequent breaks along the way to run around and stretch. This way we’ll arrive at the beach feeling refreshed and energized.
