Ingredients

  • 1 cup oat flour
  • 3/4 cup creamy salted almond butter
  • 1/3 cup coconut or brown sugar
  • 1/4 cup mini chocolate chips
  • 2 tablespoons water, plus more as needed

Directions:

  1. Preheat oven to 350°F. Coat a baking sheet with cooking spray.
  2. If almond butter is a bit dry, pop it in the microwave in 15-second intervals and stir until loosened.
  3. Combine almond butter and coconut sugar in mixing bowl. Use hand mixer to combine until mixture seems smooth and fluffy.
  4. Add oat flour and chocolate chips, and mix again.
  5. Add two tablespoons water and mix again until incorporated. Mixture will be a bit dry at this point. If it seems too crumbly, add more water one tablespoon at a time until dough comes together.
  6. Roll dough into 10 balls and place on baking sheet. Use palm of your hand to gently flatten each ball into thick cookies.
  7. Bake 15-20 minutes, or until cookies are lightly browned on bottom but still soft in center.
