I've never been a huge fan of seafood, but I know it's an excellent source of lean protein and good fat. Since I was getting a bit tired of my usual healthy staples, I asked my dietitian, Lila Ojeda, for a couple of fish dishes that didn't require a lot of time to prepare or advanced culinary skills. She first suggested sautéing a filet (I like orange roughy or halibut) with garlic, onion, and a little bit of olive oil, and then adding a can of stewed tomatoes. Her second idea was even simpler: Sauté the fish in olive oil and top with a squeeze of lemon juice and sprinkling of fresh dill. A good-for-me dinner that's tasty and super-easy? I'm definitely becoming a fan!
