These easy meals are what I made after a late night and a few glasses of wine…

Finally, two days in a row where I really cleaned out the cabinets-and it was a challenge! Wednesday night I went to an evening event that was catered and Thursday was happy hour where one friend ate dinner and the other did not but, I stood strong and ate at home both days.

On Wednesday and Thursday I had the same thing for breakfast, oatmeal with Chia Chargers peanut butter and half a banana mixed in. Where did the banana come from you ask? Every morning a group of SHAPE staffers head down to the cafeteria to get coffee and breakfast but because I'm not buying food I've been going just for the walk-and the talk. I don't know if my coworker felt bad that I was heading back to my desk empty handed or what but he bought me a banana, which was the perfect addition to my oatmeal.

Lunch on Wednesday was chicken and frozen broccoli with Italian dressing on it. As an afternoon snack I finished the other half of the Earnest Eats Choco Peanut Butter bar I had taste tested for National Peanut Butter Day.

After work, I went to an event hosted by LUNA where I learned about the delicious new salty and sweet Peanut Honey Pretzel bar. And while the event was catered with organic goodies like turkey meatballs and chocolate covered strawberries I stood strong and had just half a glass of wine. When I got home I reheated some chicken and made a baked potato stuffed with spinach from the freezer, plain yogurt, and two types of cheese. I packed a second piece of chicken and a baked potato for lunch on Thursday.

I'm actually really excited about my spinach and potato combo. After editing this post about French fries I learned that heating starchy foods like potatoes causes the formation of a substance called acrylamide, which is linked to an increased risk for heart disease and cancer. But, combining starchy foods with other veggies reduces the effect of acrylamide. Turns out I made a better choice than I knew-I was just trying to pump up the green!

Wednesday night ended with a compost cookie, which is basically a cookie that contains everything!

After work on Thursday I headed to happy hour with a girl friend where we chatted over a glass of wine until another friend came, ravenous after having moved that day. He ordered food but I told them, "No, I must cook something healthy tonight!" I'm proud to say after a second glass of wine I didn't order any food or even pick on the bread the bartender brought us. Unfortunately, by the time I got home I did not make anything healthy! Two glasses of wine was just enough to make me feel lazy and crave something salty. I managed to snack my way through several handfuls of mixed nuts while I cooked up a gourmet (read: good cheese) grilled cheese on baguette. And even though dinner was a bit high in calories and low in nutrients I treated myself to a little bit of chocolate covered honeycomb before bed because it's just that good (and because I had two glasses of wine)!

Today's produce status

Fresh Produce:
1/3 head of cabbage

1/2 a bag of carrots 

A few scallions

½ a bag of white baking potatoes, minus two

1 apple
1 (really large) butternut squash
1 acorn squash

1 ½ onions

1 serving mixed greens with shredded carrot

Handful of grape tomatoes

Frozen Veggies:

1/2 a bag of corn

1 bag of broccoli

1 bag of spinach, minus a little bit

1 bag of Brussels sprouts
