Basic Cloud Bread

Cloud bread is as simple as it is tasty. All you need are 3 eggs and 3 tablespoons of soft cheese (softened cream cheese, goat cheese, and blended cottage cheese all work). Separate the egg whites and whip into peaks with a pinch of cream of tartar (like a meringue). Beat the egg yolks with the cheese and fold into the egg whites. Spoon into bun-sized blobs on a baking sheet and cook at 300 degrees for 20 to 30 minutes, or until the tops are golden and firm.
