Meal planning is just plain smart-it makes healthy eating way easier, especially when you're crunched for time. But eating the same old thing over and over again get can bland, basic, and excruciatingly boring. If that's the case, it might be time to switch things up. What better way to do that than making three different recipes with the same simple ingredients? (P.S. If you don't already meal prep, there are a ton of reasons you need to start.)

Katrina TaTaé, blogger and personal trainer, has you covered with these creative, healthy breakfast dishes using three staple ingredients: eggs, oats, and berries. (And if you're an anti-morning person, these other easy breakfast ideas will basically save your life.)

Easy Berry Oatmeal Pancakes

Makes: 2 pancakes

Prep time: 5 minutes

Cook time: 5 minutes

Total time: 10 minutes


  • 1/3 cup oat flour
  • 1 egg
  • 2 oz egg whites
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder


  1. Grind old-fashioned oats in a blender until very fine to create oat flour.
  2. Put all ingredients in a mixing bowl and mix together until completely blended.
  3. Heat large frying pan to medium heat. Use scant amount of oil to grease pan.
  4. Pour batter in small silver dollar size dollops into pan. (The batter will spread out in the pan.) Flip when small air bubbles appear in batter.
  5. Top with favorite toppings like cinnamon and berries.

Blueberry Oat Crumble

Makes: 1 crumble

Prep time: 10 minutes

Cook time: 15 minutes

Total time: 25 minutes


  • 1/3 cup gluten-free old-fashioned rolled oats
  • 1 egg, separated
  • 1/4 teaspoon vanilla extract
  • 1/3 cup frozen blueberries
  • 1/4 teaspoon arrowroot powder
  • 1/4 teaspoon cinnamon


For the Crust

  1. Grind half the oats in a blender to make oat flour.
  2. In a small mixing bowl, mix the oat flour, egg yolk, 1/2 of the egg white, remaining rolled oats, and vanilla extract.
  3. Take 2/3 of the mixture and press into the bottom of a small oven-safe dish, like a ramekin.

For the Berry Filling

  1. Warm the frozen berries until melted through.
  2. In a small mixing bowl, mix the berries, arrowroot powder, remaining egg white, and cinnamon.
  3. Spoon the filling on top of the pressed crust.

For the Crumble

  1. Take the remaining 1/3 crust mixture and crumble over the top of the berry filling.
  2. Bake at 300°F in the oven for 10 to 12 minutes until top crumble is golden brown.

Berry Oat Crust Egg Bake

Makes: 1 serving

Prep time: 10 minutes

Cook time: 15 minutes

Total time: 25 minutes


  • 3 egg whites
  • 1 egg
  • 1/3 cup gluten-free old-fashioned rolled oats
  • 1/3 cup blueberries


  1. Pour egg whites into an oven-safe baking dish lined with parchment paper.
  2. Drop egg into center of dish.
  3. Sprinkle oats and blueberries around the edges of the dish.
  4. Bake at 325°F for 15 to 18 minutes.

Best served immediately.
