This Healthy Single-Serve Brownie Recipe Is the Ultimate After-Work Treat
No need to worry about being tempted by a whole pan. This updated version of the mug cakes you've been acquainted with is just as warm, chocolaty, and gooey. [Drool.]
We all have different ways of coping with a particularly terrible workday. For some, collapsing onto the couch for a Friends marathon and a glass of wine will do the trick. For others, a SoulCycle class feels like the best way to sweat out the Monday blues.
If there's one thing everyone can agree on, though, it's that dessert makes any bad day better. Still, it's a catch-22. Once you've eaten that plate full of sugar, you tend to feel even worse. What's a girl to do?
Make a single-serve brownie, of course.
This one isn't terrible for you, it involves a short list of ingredients, and it comes together in the microwave. Adding toppings like sprinkles, chocolate sauce, and a little bit of low-sugar ice cream isn't anything to feel bad about either; you've already cut down on so much sugar within the brownie itself. And no, you won't be tempted by the other brownies waiting in the pan, because, well, there is no pan, and there are no others. That's not sad-it's genius! Think of this recipe as the more sophisticated cousin of those microwave mug cakes you've grown to love. (Although, this cinnamon roll in a mug looks pretty darn good.) With the addition of creamy yogurt and only half a teaspoon of sugar, it's a guaranteed bad-day-saver. Just try it.
Total time: 10 minutes
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 tablespoons whole-wheat flour
- 1/2 teaspoon granulated sugar
- Pinch of salt
- 2 tablespoons water
- 1 tablespoon unsweetened vanilla yogurt
- 3 teaspoons honey
- Use a small whisk to thoroughly combine cocoa, flour, sugar, and salt in a small bowl or mug. Next, in a separate bowl or mug, combine water, yogurt, and honey until well combined. Slowly add dry ingredients to wet ingredients, 1 tablespoon or so at a time. Stir until everything comes together. (Be mindful not to over-stir.)
- Lightly butter a small ramekin, or use cooking spray to coat inside completely, then pour batter inside. Tap ramekin a few times on the surface of a counter to allow any air bubbles to burst. Then, change the microwave settings to 40 percent power and microwave brownie for 2 minutes, pausing and resuming the cooking process every 20 seconds.
- After removing the ramekin from the microwave (be careful-it'll be hot!), allow to rest for about a minute. It'll continue cooking during this time. If you find that it's not quite cooked through after the rest period, continue cooking for intervals of 15 seconds until you're satisfied with the texture.
- Turn the ramekin over onto a plate (or eat the brownie straight from that original container), and add any desired toppings-rainbow sprinkles highly suggested.
