Made with healthy whole grains and maple syrup, this easy vegan quick bread recipe is a delicious and energizing breakfast or snack. Vegan Olive Oil & Maple Quick Bread Recipe

Makes: 12 servings

Total time: 1 hour

Ingredients:

1/2 cup extra-virgin olive oil, plus more for the pan

2 cups white whole wheat flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup pure maple syrup

1 cup fresh orange juice

1 tablespoon cider vinegar

Directions:

1. Preheat oven to 350°. Lightly coat a 9-by-5-inch loaf pan with oil and line bottom with parchment.

2. Whisk flour, baking powder, baking soda, and salt in a large bowl. Then whisk olive oil, maple syrup, orange juice, and vinegar in a medium bowl. Make a well in the dry ingredients. Pour wet ingredients into well and whisk, gradually drawing in dry ingredients. Continue whisking until smooth. Pour into prepared pan.

3. Bake until a skewer inserted in the center comes out clean, 45 to 50 minutes. Let cool completely in pan on a rack.

4. Serve on its own or with pretty much anything. It'll keep for a week tightly wrapped in foil at room temperature.
