Healthy salad recipes: side salad
Quarter 1 head radicchio and place in a baking dish. Whisk together 1 oz. maple syrup, 3 tbsp. red wine vinegar, 1 tbsp. extra-virgin olive oil, 1 tbsp. chopped fresh thyme, and salt and pepper to taste. Pour mixture over radicchio and marinate for 1 hour. Place in a grill pan or on a grill; cook over low heat for 15 minutes, turning regularly, until soft.

In a large bowl, toss together 2 cups thinly sliced radicchio; 2 cups baby spinach; 1 oz. crumbled Gorgonzola (or another blue cheese); 1/2 cup toasted pecans; and 6 dried mission figs, cut into quarters. Blend 3 tbsp. extra-virgin olive oil with 1 tbsp. balsamic vinegar and 1/4 tsp. dried oregano. Toss salad with dressing and divide between two plates.

Saute? 1 cup thinly sliced radicchio and 2 tbsp. each minced garlic and shallot in 2 tbsp. olive oil for 3 minutes. Add 1 diced portobello cap and 1/4 cup sliced sun-dried tomatoes. When mushroom is soft, add 2 tbsp. vegetable stock; stir, scraping bottom of pan. Cook for 6 minutes. Add 2 tbsp. lowfat plain yogurt; bring to a boil. Toss with whole-wheat pasta and grilled chicken.
