Thai Curried Coconut-Pumpkin Soup

Because it’s served cold, this soup makes the perfect portable work lunch. Just pour it into a tightly sealed jar, place the coconut topping in a separate container, put the sliced chile and cilantro in a baggie, and pack it all in an insulated lunch bag. Then assemble just before eating.
