In-Season Pick: Broccoli Rabe

  • Over pasta
    Cook 8 oz. sliced turkey
    sausage and 5 cloves sliced garlic in 2
    tbsp. olive oil over medium heat for 5
    minutes or until meat browns. Add 5
    cups chopped broccoli rabe, ½ cup red
    wine, 1 cup low-sodium chicken stock,
    and pepper. Simmer 5 minutes; serve.
  • In a stir-fry
    Brown 8 oz. cubed
    chicken in a wok with 1 tbsp. chili
    pepper flakes and 2 tbsp. sesame oil.
    Add 5 cups chopped broccoli rabe, 1
    cup sliced onions, and 2 cups Chinese
    cabbage. Stir-fry 3 minutes. Season
    with soy sauce and serve over quinoa.
  • As a side dish
    In a 4-quart pot, sauté
    5 halved garlic cloves in 2 tbsp. olive oil
    for 2 minutes. Add 2 cups sliced cremini
    mushrooms; raise heat to medium-high
    and cook 2 minutes. Toss in 5 cups
    chopped broccoli rabe; lower heat to
    medium. Cook 5 minutes, then serve.

In 1 cup cooked broccoli rabe: 76 calories, 6 grams fiber, 163 MCG Folate, 6229 MCG Beta-Carotene
