Think stuffed artichokes are tricky to make and loaded with calories and fat? Not these! "Most of the calories in the typical version come from bread crumbs- and who needs all those empty carbs?" says food writer Roscoe Betsill, who developed this recipe. His stuffing is a fiber-rich bulgur and veggie mix that complements the natural nutty flavor of the artichokes. And while this dish takes an hour from start to finish, it's super easy. "If you're going to spend time in the kitchen, it should be worth the effort," says Betsill. "This is a real meal-you get whole grains, veggies, and protein in one tasty vegetarian entree!"
