If you're the kind of person who doesn't just dust your smoothie bowls with coconut flakes but covers every inch of the bowl with sweet shavings, this recipe is for you. When coming up with this truffle recipe, Watt Sriboonruang, founder of Rawsome Treats in New York, went all in for a coconut-on-coconut-on-coconut creation. The resulting candies are raw, vegan, and free from refined sugar, which can't be said for most desserts. Yes, you have to love coconut to love this recipe, but the burst of refreshing flavor could convert even the strongest of skeptics. To make these, all you have to do it toss three variations of coconut-coconut meal, coconut flakes, and coconut butter-into a food processor with some vanilla extract. And while you probably wouldn't call these truffles health food, coconut does offer some nice nutrition benefits, including fiber and healthy fat (specifically medium-chain triglycerides). Go ahead and assemble your ingredients, but be warned: Once you try these flavor bombs, other coconut desserts will pale in comparison.

Coconut Truffles


  • 1/2 cup coconut flakes + 1/4 cup for coating
  • 1/2 cup coconut meal
  • 1/2 cup coconut butter
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon Himalayan salt, optional


  1. Blend all ingredients in a food processor until well blended.
  2. Roll a bite-size ball in your palms and coat with coconut flakes.
