These Strawberry Champagne Pancakes Make the Perfect Holiday Breakfast

There's nothing better than waking up on a holiday morning (whether it's Christmas, Hanukkah, or New Year's Day) to the smell of freshly brewed coffee and the sounds of breakfast being made.

But this isn't a day to nosh on your run-of-the-mill oatmeal, eggs, or bagels. For any special occasion, you'll forever want to whip up these strawberry champagne pancakes from Veggie and the Beast. Not only is there champagne in the pancake batter (which makes them especially light and fluffy), but you top the cakes with a smashed strawberry champagne syrup that's sweet, tart, and perfect for an indulgent (and hangover-soothing) morning treat.

The best part? Aside from the fruit, you most likely bought all this stuff for your holiday baking anyway, so it's already in your kitchen. Use up some leftover champagne from the night before (or pop a whole new bottle in the name of mimosas) and you'll be ready for the breakfast of champions. Here's what you'll need:

  • eggs
  • lowfat buttermilk
  • canola oil
  • unbleached all-purpose flour
  • fine sea salt
  • baking powder
  • granulated sugar
  • champagne
  • strawberries
  • orange zest
  • fresh-squeezed orange juice
  • cornstarch

And while these aren't exactly the healthiest pancakes out there, there's a time and place to #treatyoself, and this is it. We've got every genre covered, from champagne vinaigrette salad dressing and champagne risotto to champagne jello desserts, champagne-soaked gummy bears, and fluffy champagne cupcakes.
