Researchers fromthe USDA Agricultural ResearchService found that it raises levelsof arginine, an amino acid shownto improve blood-vessel functionin the body. Study subjects whodrank three glasses of watermelonjuice a day had 12 percent higherlevels of arginine than those whodidn't drink any.
