I recently attended an awesome green living conference in Boulder, Colorado. All of the activities were hands on, like learning about a hybrid car then driving it, and hearing about organic and sustainable food then eating it, etc. We also stayed in an environmentally friendly zero net energy home that uses solar power and geothermal energy (power extracted from heat stored in the earth). It was pretty awesome!

One event was a fun smoothie contest and my partner and I won (yay!) with the following recipe:

1 cup almond milk

2 Tbsp almond butter

Half cup strawberries

Half cup pineapple

Handful spinach

1 tsp ground coffee beans

Handful ice

Just toss everything into a blender and whip. One smoothie contains about 330 calories, packs a great balance of carbs, protein, and good-for-you fat and is loaded with vitamins, minerals and antioxidants (and of course a caffeine kick).

Tossing spinach into a fruit smoothie is a great way to sneak in an extra serving of greens. One cup adds just 10 calories but bolsters your meal with tons of nutrients, and a recent study found that an additional 1.5 cups of leafy greens a day may be powerful enough to cut the risk of type 2 diabetes by 14%.
