Bacon and Eggs in a Jar


  • 2 eggs
  • 1 handful fresh spinach
  • 1/4 cup shredded cheese
  • Salt
  • Pepper
  • 2 slices turkey bacon


  1. Mix eggs, spinach, and cheese in a bowl. Add salt and pepper to taste.
  2. Pour mixture into a mason jar. Microwave for 1 1/2 to 2 minutes, checking often. Eggs will puff up while cooking but will deflate when taken out, so don't worry if it rises higher than the jar.
  3. Meanwhile, cook bacon slices according to package directions. Crumble bacon slices on top of eggs.
