Bagel-and-Lox Salad


  • Pumpernickel bread
  • Olive oil
  • Dried oregano
  • Dried basil
  • Dried thyme
  • Garlic powder
  • Salt
  • Pepper
  • Arugula
  • Red onion
  • Cucumber
  • Smoked salmon
  • Capers
  • Plain Greek yogurt


  1. Flatten 1 slice pumpernickel bread with a rolling pin and brush both sides with olive oil. Season with dried oregano, basil, and thyme; garlic powder; salt; and pepper and bake in a 425 degrees oven until crisp, 6 to 8 minutes. Break bread apart over a salad of arugula, red onion, and cucumber topped with smoked salmon and capers. Toss with plain Greek yogurt or a creamy dressing of the yogurt mixed with olive oil, dill, and lemon juice and zest.
