Beet Juice, Honey, and Whiskey Cocktail


  • 1 1/2 ounces blended scotch whiskey
  • 1 ounce fresh beet juice
  • 3/4 ounce fresh lemon juice
  • 3/4 ounce honey syrup
  • 1 sprig fresh tarragon, for garnish


  1. For honey syrup, combine three parts clover honey with one part water in a saucepan. Heat until honey is smoothly incorporated. Allow to cool before using. Refrigerate to preserve.
  2. Combine the liquid ingredients into a cocktail shaker with ice. Shake until cold.
  3. Fine strain into a chilled cocktail glass and garnish with a sprig of fresh tarragon.
