Canyon Ranch French Toast


  • 1 large egg
  • 4 egg whites
  • 3 tablespoons light coconut milk
  • 1/2 cup nonfat milk
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon orange marmalade
  • 1 teaspoon minced fresh ginger
  • 1/2 cup pure maple syrup
  • 1 teaspoon fresh lime juice
  • Cooking spray
  • 8 slices whole-wheat bread


  1. In a shallow bowl, whisk together the egg, egg whites, coconut milk, nonfat milk, nutmeg, cinnamon, and vanilla.
  2. In a small bowl, whisk together the marmalade, ginger, maple syrup, and lime juice; set aside.
  3. Spray a saute pan with cooking spray and heat over medium. Dip both sides of each bread slice in egg mixture. Cook for about 1 minute per side or until golden brown.
  4. Drizzle syrup mixture over French toast.
