Cauliflower Pizza Crust
- Florets from 1 medium cauliflower, pulsed in a food processor into a ricelike consistency
- 1/2 cup shredded mozzarella
- 2 tablespoons grated Parmesan
- Use a kitchen towel to thoroughly squeeze out any water from the vegetables. Then mix them with cheese, 1 egg, and a pinch each of salt and pepper. Stir until evenly combined, turn the mixture out onto a parchment-lined baking sheet, and press into a 12-inch circle, about 1/4-inch thick. Bake at 400 degrees until cooked through, 40 to 45 minutes.
