- 2 tablespoons unsweetened coconut flakes
- 1 cup brown rice
- 1/4 cup chopped carrot
- 1/4 cup chopped bell pepper
- 3 ounces grilled chicken
- Store-bought peanut sauce
- Stir coconut flakes into brown rice. Add carrot and bell pepper and top with grilled chicken. Drizzle with peanut sauce.
