Chicken Pad Thai Sandwich


  • Peanut butter
  • Cilantro
  • Sesame oil
  • Rice vinegar
  • Minced garlic
  • Sriracha
  • Carrots

  • Ciabatta
  • Rotisserie chicken


  1. In a blender, puree 1 cup smooth peanut butter, 1 bunch cilantro, 1 tablespoon sesame oil, 1/4 cup rice vinegar, 1 tablespoon minced garlic, and 2 tablespoons Sriracha. Toss 2 cups each julienned carrots and red onion with 1 julienned cucumber, 5 julienned radishes, and 1 thinly sliced jalapeno, plus basil, cilantro, and mint to taste. Top 4 toasted ciabatta slices with shredded rotisserie chicken and the slaw; drizzle with spicy peanut sauce.
