Deliciously Simple Kale Salad


For the vinaigrette:

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt to taste
  • Black pepper to taste

For the salad:

  • 1 bunch Lacinato kale, chopped
  • 1 large radish, sliced
  • 1/4 cup roasted cashew halves, lightly salted
  • 1 tablespoon raisins


    For the vinaigrette:

    1. Whisk together olive oil, vinegar, honey, salt and pepper in a small bowl; set aside.

    For the kale salad:

    1. Rinse kale well under running water; dry with cloth or paper towel and remove stems. Roughly chop kale and place in a large mixing bowl.
    2. Pour half of the vinaigrette over the kale. Massage kale with vinaigrette for 30 seconds to 1 minute (helps tenderize). Let sit for another 3-5 minutes.
    3. Plate salad and add radishes, cashews and raisins. Drizzle more vinaigrette on top.
