This cocktail is like cucumber-infused spa water with a happy hour twist.
- 3 cucumber wheels, divided
- 2 sprigs mint, divided
- 1 1/2 ounces Plymouth gin
- 1 ounce lime juice
- 3/4 ounce simple syrup
- 1 1/4 ounces club soda
- In a cocktail shaker, muddle 2 cucumber wheels and 1 sprig mint. Add gin, lime juice, and simple syrup, and shake. Strain over ice into a high ball glass and garnish with remaining cucumber wheel and mint sprig.
