Green Beans with Brown Rice and Garlic
- 8 ounces green beans, ends removed
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup cooked brown rice
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Bring 16 cups of water seasoned with salt to a boil. When boiling, add green beans. Cook beans about 5 minutes, or until just tender. Pour into colander and rinse with cold water.
- In a large saute pan, heat butter and olive oil. Add garlic and cook over medium heat about 1 minute, or until fragrant. Add cooked rice, beans, salt, and pepper. Toss well and heat for 1 to 2 minutes, or until beans and rice are both warmed through. Serve immediately.
