Kale Miso Soup


  • 2 cups vegetable broth
  • 1 onion, cut into large chunks
  • 2 cloves garlic, cut into large chunks
  • 1 pound extra-firm tofu, pressed and cubed
  • 2 cups firmly packed kale, torn into large pieces, plus more for garnish
  • 2 teaspoons miso


  1. Bring vegetable broth, onion, and garlic to a boil in a medium saucepan. Add tofu and return to a boil. Add kale, cover, and cook on low for 5 minutes. Remove saucepan from heat and stir in miso. Transfer soup to a blender, cover tightly, and blend for 30 seconds to 1 minute. Serve garnished with pieces of raw kale.
