Mac 'n Cheese


  • 1 1/2 cups dry macaroni
  • 1 1/4 cups 1% milk
  • 2 teaspoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup fat-free Cheddar cheese, finely shredded
  • 1 cup reduced-fat sharp Cheddar cheese, shredded


  1. Cook macaroni according to the package directions. Drain well.
  2. Meanwhile, combine 1/4 cup of milk with the cornstarch. Stir until smooth and lump free.
  3. Combine cornstarch mixture, remaining milk, salt, and pepper in a medium saucepan. Cook and stir over medium heat until bubbly and thick. Remove from heat.
  4. Add cheese and stir until melted and smooth. Add cooked macaroni to the cheese sauce.
  5. Toss gently to coat. Cook over low heat for 5 minutes or until heated through. Serve.
