Mango Crostini


  • Red onion
  • Cucumber
  • Mangoes
  • Medium avocado
  • Sprigs of cilantro
  • Salt and pepper
  • Orange juice
  • Lemon juice
  • Lime juice
  • Red wine vinegar
  • Toasted baguette slices
  • Olive oil


  1. Dice 1 red onion, 1 cucumber, and the flesh of 2 mangoes and 1 medium avocado, and chop 4 sprigs of cilantro. Season the ingredients with salt and pepper, add 2 tablespoons each orange juice, lemon juice, lime juice, and red wine vinegar, and gently toss. Spoon the mixture onto toasted baguette slices, and drizzle with olive oil.
