Pickled Red Onions


  • 1 red onion, peeled and thinly sliced
  • 1/2 cup red wine vinegar
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 pinch black pepper


  1. In a small saucepan, bring all ingredients to a simmer and cook for 15 minutes. Transfer to a jar. Refrigerate for at least 30 minutes and up to 2 weeks.
