Quinoa and Grilled Fig Salad


  • Red onion
  • Garlic clove
  • Quinoa
  • Salt
  • Cayenne pepper
  • Water
  • Figs
  • Parsley
  • Mint leaves
  • Toasted sesame seeds
  • Greens
  • Feta
  • Lemon zest


  1. Saute 1 diced red onion and 1 smashed garlic clove in oil. Add 1 cup quinoa, 2 teaspoons salt, 1/2 teaspoon cayenne pepper, and 2 cups water; bring to a boil and simmer until water is absorbed. Coat 8 halved figs with olive oil, season with salt and pepper, and grill for 2 minutes, cut side down. Add 2 tablespoons chopped parsley, 1/2 cup mint leaves, 2 tablespoons toasted sesame seeds, 4 cups greens, and 1/2 cup feta to the quinoa and stir. Top salad with grilled figs and lemon zest.
